The leaves are changing, the sun is setting earlier, and Ugg boots are starting to emerge on the street after a long summer hibernation. You know what that means: Fall is here! For foodies, that means bountiful squash, earthy sweet potatoes and…pumpkin!
Pumpkins are good for more than carving into scary faces and starring in Charlie Brown movies. Because it has seeds, it’s technically a fruit, like tomatoes, and is incredibly nutritious. Low in fat and calories, it delivers antioxidants (pumpkin gets its orange hue from beta-carotene, a powerful cancer-fighter), hunger-squashing fiber and vitamins C and E.

Pumpkin Oatmeal
Ingredients
1 cup quick-cooking rolled oats
3/4 cup milk, or as needed
1/2 cup canned pumpkin puree
1/4 teaspoon pumpkin pie spice
1 teaspoon cinnamon sugar
Directions
Mix together oats and milk in a microwave-safe bowl. Cook on high for 1 to 2 minutes, stirring once. Add more milk or oats to achieve the desired consistency, and cook for another 30 seconds. Stir in pumpkin puree, pumpkin pie spice, and cinnamon sugar. Heat through, and serve.
