Baked Mini Spice Donuts - A Kefir Recipe Just in Time for the Holidays

With the holidays right around the corner, you may soon find yourself with a few gifts you’re not quite sure what to do with. Take the novelty appliance, for instance. Who can resist the candy-colored mini donut makers, cake pop machines and electric cupcake cookers that seem to be everywhere this time of year?
Well, it just so happens that we became proud mini donut machine owners this time last year, so we’re offering up a recipe that we hope will help to keep yours from collecting dust on your shelf. No mini donut maker? No problem! Just double this recipe and bake these donuts on a greased cookie sheet or in a donut pan. If you're using a cookie sheet you can shape these any way you like!
These lightly spiced donuts are bite-sized, so they’re just a small indulgence, and they’re baked, not fried. We threw in some tangy Greek Style Kefir to give these a protein boost, but you could use any kefir you like.
Ingredients:
- 1 & 1/2 cups all-purpose flour*
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground clove
- 1 egg
- 1/2 cup sugar
- 1/2 cup Lifeway Greek Style Kefir
- 4 Tbs butter or non-hydrogenated margarine, melted
*Substitute up to 1/2 of this amount (3/4 cup) with whole wheat flour for a heartier, whole grain donut.
Directions:
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and ground clove. In a smaller bowl whisk together the egg, sugar, kefir and melted butter. Add the egg mixture to the flour mixture and stir just until mixed. The batter will be thick.
If you're using a donut maker, just follow the manufacturer's instructions - we cooked ours for exactly two minutes. If you're using a donut pan or sheet pan, bake in an oven pre-heated to 350 degrees until golden brown, 8-10 minutes.
Dust with powdered sugar.
Bonus ideas:
One we tried kefir in donuts our creative juices started flowing. Here are a few other recipes we'd like to try, let us know if you try them, or if you have another great idea!
- Use peach kefir and toss in some pecans for a peach cobbler donut.
- Substitute 1/4 cup of the flour with unsweetened cocoa powder and replace the egg with 1/2 mashed, ripe banana for a yummy chocolate-covered banana donut.
- Use blueberry kefir and 1/4 cup fresh or frozen wild blueberries for donuts no Smurf could say no to.
