Get Turned on with Kefir

If you Google the word “aphrodisiac,” Wikipedia will tell you that it’s a substance that increases sexual desire, gourmetsleuth.com will suggest almonds, coffee and pineapple, and Deepak Chopra’s yoga instructor will suggest you whip up a batch of “sexy cashew nut milk.” Here at Lifeway, we stick with the basics. It doesn’t take fancy lingerie or a box of truffles to turn us on. Among the things that get us all hot and bothered:
-The feel of frozen kefir against a hot tongue.
-The word “tangy.”
-Any UPS shipment that arrives on time.
-Recycling (we’re a green company)
-Passing a health code inspection with flying colors.
Also? We love us some beet soup. Especially when it’s juicy, blood red and dripping down our chins. We found this Valentine’s Day-friendly recipe over at Love & Olive Oil which uses plain kefir and is served with sexy, swirled hearts floating on top.
Try it out on your sweetie. It’s easier than making homemade nut milk and won’t give you coffee breath.
Beet and Fennel Soup With Kefir
Yield: 4 servings
Prep Time: 30 minutes
Total Time: 50 minutes
INGREDIENTS:
2 tablespoons olive oil
1 cup chopped onion
1 cup chopped fennel bulb
1 1/2 teaspoons fennel seeds
2 large (2 1/2- to 3-inch-diameter) beets, peeled, cut into 1/2-inch cubes
2 cups low-salt chicken broth
1 cup unflavored kefir
Additional unflavored kefir
and fennel fronds (for garnish)
DIRECTIONS:
Heat olive oil in large saucepan over medium heat. Add chopped onion, chopped fennel, and fennel seeds. Sauté until vegetables soften, about 5 minutes. Add cubed beets and stir to coat. Add chicken broth and bring to boil. Cover; reduce heat to medium-low. Cook until beets are tender, 18 to 20 minutes. Puree soup in batches in blender. Return to same saucepan. Whisk in 1 cup unflavored kefir and season soup with salt and freshly ground black pepper. Rewarm soup.
Ladle soup into bowls. Drizzle with additional unflavored kefir; garnish with fennel fronds.
TIP: To make the heart-shape design in this soup, spoon small drops of kefir onto the soup. Run the tip of a paring knife through the center of the round drop of kefir, creating a heart shape.
