Kefir-Pesto Marinated Chicken DrumsticksAug

Food on a stick is one way to turn ordinary dishes into something truly delightful. It’s hard to eat a corn dog without smiling and ice cream novelties scream summer. At Lifeway, we like to put a healthy twist on things when we can, and our new Frozen Kefir Bars take popsicle to a new probiotic level. Most county fair staples on a stick need a real overhaul to land in the health food category, so we went back to the original meat on a stick, the chicken drumstick!
To keep it crazy easy (as food on a stick should be) you only need to add 2 ingredients to your chicken drumsticks to turn them into a delicious dinner you can eat standing up. Or make it a complete meal with a side of veggies and a whole grain dish like brown rice.
Kefir-Pesto Marinated Chicken
Yield: about 12 drumsticks (this is enough to feed a crowd or make enough to have leftovers, but works well scaled back, too)
4 lbs chicken drumsticks with the skin
1 ¼ cup Lifeway Lowfat Plain Kefir
6 oz jar pesto Genovese (or ¾ cup homemade pesto for any successful herb gardeners with extra basil on hand)
½ tablespoon salt
1 teaspoon black pepper
Mix kefir, pesto, salt and pepper. Divide chicken legs in 2 gallon ziplock bags and pour kefir mixture into bags to coat the chicken. Seal and refrigerate for 2 hours or overnight. The longer it soaks in the marinade, the more tender and delicious the chicken.
Remove chicken from the refrigerator 30 minutes to 1 hour before baking (room temperature chicken will bake more evenly). Preheat oven to 425 degrees. Cover 2 sheet trays with parchment paper and space chicken out evenly on trays. Bake for 25-35 minutes until chicken is cooked through, rotating the trays and flipping the drumsticks half way through cooking to brown evenly.
Serve hot or cold as a perfect picnic dish!
