It’s National Salad Month!

May is also National Salad Month and if we at Lifeway enjoy anything, it’s a big, hearty, colorful salad, preferably enjoyed while dining al fresco in perfect 75 degree temps. To celebrate this special occasion, here are a smattering of recipes to make it easy for your entire family to enjoy:
1-15 oz can navy or cannelloni beans, drained and rinsed
4 oz red bell pepper, diced
2 Tbsp parsley, chopped
2 Tbsp scallions, sliced
2 Tbsp lemon juice
1 clove garlic, minced
Salt to taste
Mix all ingredients together. For the best flavor, let salad sit in refrigerator for an hour. Serves 7 (serving size is 1/2 cup).
1 cup celery root, cut in matchstick sizes or grated coarsely
1 cup firm apples, unpeeled but cored and cut into matchstick-sized pieces or coarsely grated
1/2 cup coarsely chopped walnuts
1 cup plain, low-fat Lifeway kefir
1/2 Tbsp tamari sauce (soy sauce)
2 tsp honey
1/2 tsp spicy herbal salt
dash cayenne pepper (optional)
Gently fold tamari sauce, honey, herbal salt and cayenne pepper into kefir. Toss celery root, apples and walnuts in kefir dressing and refrigerate at least one hour to enhance the flavor.
2 cups plain, low-fat Lifeway kefir
1 packet Italian Seasonings powdered dressing mix (the kind that comes with a bottle to make dressing in)
1 or 2 tsp red wine vinegar
1/4 cup grapeseed oil (or favorite salad oil)
Place kefir, dry seasonings packet and vinegar in a blender and mix. Then, add in the oil in a slow stream while running the blender on low. Stop when the mixture thickens up (discard any remaining oil) and pour over your salad of choice.
1 cup plain, low-fat Lifeway kefir
2 Tbsp roasted pumpkin seed oil
1/3 cup lemon juice
1 tsp Dijon mustard
1 tsp sea salt, or more to taste
1 Tbsp dried tarragon, crushed
1 pinch chipotle or cayenne pepper
1 pinch garlic powder
Simply whisk all ingredients in a bowl and enjoy with your favorite salad!
